What makes us different
The Arcadia Vineyards project was born as a multidisciplinary project focusing on high quality wine production, agriculture and tourism, setting an example for a new concept of vacation, lifestyle and luxury developed with the principle of sustainability.
At Arcadia Vineyards, the grapes are harvested by hand at the first light of the morning and processed in the winery located in the vineyards without waiting in accordance with the “Castle Type” production. The grapes are hand-selected again in the winery and each parcel separately fermented in small-volume tanks with the microvinification method.
In order to preserve all the special flavors from the Arcadia Vineyards terroir, to deliver them to the glass in their entirety and to produce wines that continue to live until consumption, manipulative processes that may alter the flavors, including the common ones such as fining and conventional filtration, are not used in our production.
The care taken in growing the grapes in the vineyard continues with the hand picking of each individual cluster. In order to prevent the grapes from losing their flavor and to prevent uncontrolled fermentation by wild microorganisms in the skin, it is very important that the must does not flow and the skin is not damaged in any way until it enters the processing.
That’s why the Arcadia Vineyards are harvested with scissors, not knives. The grapes are carried in small 8-kilo baskets with holes so that they are not crushed by the weight of each other and the juice does not leak. Even these small production process details are important factors that determine and protect the natural quality of the wine.
The winery uses delicate pressing techniques, a new technology de-stemmer with rubber fingers designed to carefully sort the grapes as if processed by hand without tearing the grapes, as well as the old method of manual grain selection, gravity technique, specially designed stainless steel tanks, traditional French oak casks and barrels from several selected tonneliers.
The friction that occurs during the pumping of the grapes and must results in the formation of undesirable harsh flavors. When these flavors are corrected by additional processing, some of the wine’s original flavors are lost along with these unwanted flavors. This is why in Arcadia Vineyards, thanks to the special design of the winery, the grapes and must are filled into the presses and tanks by gravity, without going through pumps.
In the vineyard, each parcel is monitored separately according to its characteristics and the grapes coming from each parcel are fermented separately in specially designed small tanks in the winery. Punching is done by hand for controlled extraction of color and tannin of the red grapes. After a controlled fermentation in small volumes, the wines are tasted and blended upon maturation and further matured in bottles in our underground cellars.
